Slow-Roasted Salmon With Endamame Potato Salad
Slow, as in you mean, 17-20 minutes? Surprisingly, that’s all it takes. Roasted at minimal temperature salmon takes on a melt-in-the-mouth smoothness that goes so well with a chunky potato salad, creamy with sour cream (think lox) and dotted with bright green endamame, or soy beans.
